DRESSING:
1 ½ tsps chopped onion
¾ cup sugar
⅓ cup balsamic vinegar
1 tsp dry mustard
1 tsp salt
1 cup EVOO
1 ½ tablespoons poppy seeds
baby spinach & arugula
candied pecans or other nuts
sliced strawberries or pomegranite seeds
gorgonzola or goat cheese crumbled
A beautiful Christmas salad
DRESSING:
Combine all except EVOO in a blender container and process to mix well. Add the olive oil gradually, processing constantly until smooth. Add poppy seeds and process until mixed.
Makes about 2 cups.
Refrigerate.
To serve, thin dressing with a little water.
Toss greens with dressing and crumbled cheese.
Place dressed greens on salad plates and top with nuts and fruit.
